Hong Kong Milk Tea

Ingredients

  • Lipton yellow label black tea
  • Rickshaw black tea
  • Alwazah ceylon tea
  • Black & white evaporated milk
  • Sugar

Recipe

  • 60g tea blend
  • 1200g water
  • 1 can evaporated milk (354g)

Steps

  1. Bring water to a boil.
  2. Pour tea blend into tea bag.
  3. When water is boiling, do two tea pulls. The first pull will be into the empty pitcher. The second pull will be back into the tea pot.
  4. Brew the tea on medium-high heat for 10 minutes.
  5. Turn the heat to low, then four tea pulls. Loosen the leaves to encourage more extraction.
  6. Brew on low heat for 15 minutes.
  7. Prepare a warm cup and fill up 1/4 of the cup with evaporated milk.
  8. Fill the rest of the cup with tea.
  9. Add sugar to taste.
